DRAGONFRUIT SMOOTHIE RECIPE

Not sure about you guys, but when the whether is cool I can’t do salads or smoothies! Just can’t. 

I’m also notorious for skipping lunch. I made it my little goal this week to eat more veggies, especially at lunch, to move more and to drink more water. I’ve kept it simple. I don’t have big pockets of time for training, but I’ve been sneaking in 20 minute sessions at home. I bought a big bunch of kale and a bunch of silverbeet and I’ve been cooking that lightly with some radish, some sunflower seeds, dousing it in lemon juice and adding goats cheese.

Lunch brief fulfilled!

BUT, on these warm summery days, this little dragonfruit smoothie has been rocking my world! I’m feeling all kinds of smug for having a stash of this pink beauty in the freezer from summer.

1 cup frozen dragonfruit

1/2 cup frozen pineapple

1/4 cup cashew nuts

1 scoop salted caramel collagen from Australian Protein Supplies (Caitlin15)

Liquid of choice (I use part almond milk part coconut water). Start with one cup and you can add more to suit your liking. 

Place all ingredients in a high speed blender and blend well!
If you like your smoothies thick like ice cream, keep the liquid to approx one cup (you will need a spoon )! Add more for a smoothie drinking straw experience.

EAT + DRINK THE RAINBOW
